India Monsooned Malabar
A truly unique coffee, Monsooned Malabar has a story that pairs well with this truly unique coffee.
Originally (back in the day) Indian coffee was sent around the globe in large wooden crates and barrels that were loaded on large boats. It just so happened that coffee export season took place during India’s monsoon season. Throughout the long voyage, the coffee bean containers would become saturated from the rain and in turn, so would the beans. This caused the coffee beans to ferment. By the time they reached their port of arrival, the beans changed color from a (normal) seafoam green to a pale yellow color, and developed an odd odor. These yellow musty beans were originally looked down upon by their recipients (in part because they did not look like the beans they had seen at the farms)… that is, until they roasted, ground, and brewed them into some hot java. They quickly realized the "monsooning" that the beans endured created a light earthy cup of coffee that was inherently low in acidity due to the fermentation that took place. Thus, the modern monsooning process was born. Nowadays, the beans are intentionally monsooned in a controlled environment in large warehouses creating to one of the most unique beans, and a very delicious, smooth cup of coffee.
You can experience this coffee best in the lighter roasts with tea-like notes of vanilla, unsweetened marshmallow, and an unmatched smoothness. The low acidity of this coffee, and the mild earthy taste only add to it's rich history and amazing story.
